Here’s a sketch map of the entire trip. Sixteen total days, including arrival and departure, primarily on the Ring Road. It’s a tremendous itinerary for any time of the year. I highly recommend May. Due to weather, they were not able to go to Dettifoss or the whaling town of Husavík to the north, and did not get the full experience at Mývatn. However, they were able to go ice caving, which is not always possible in the summer. Any time of year has its benefits and challenges. Here’s the general itinerary so that you can use it as a basis to plan your own trip to Iceland:

Day 1: Arrive Keflavík, dinner and lodging in Reykjavík (there are many great choices for both)
Day 2: Reykjavík, many options for sightseeing, shopping, books & coffee shops
Recommendations: Hallgrímskirkja, Sólfar (Sun Voyager) sculpture, Harpa Concert Hall, city walking tour, National Museum of Iceland, Tales of Iceland, Settlement Museum
Day 3: Hveragerði, geothermal town, hot river short hike at Reykjadalur
Þingvellir National Park: historic site where the law was spoken and you can walk between the continents
Laugarvatn, spa
Day 4: Geysir with numerous geysers
Gullfoss: broad, beautiful waterfall
LAVA Centre in Hvolsvöllur, hands on science exhibits about volcanoes
**suggestion: if you like history, stop at Skálholt Cathedral
Day 5: Seljalandsfoss, the powerful waterfall you can walk behind
Skógafoss, very tall, powerful waterfall
Solheimasandur Plane Wreck on south coast
Reynisfjara Beach in Vík, black sand beach with sea stacks along a beautiful little town
**suggestion: Dyrhólæy near Vík is very beautiful
Day 6: Skaftafell
Svartifoss,
a stunningly beautiful waterfall pouring over black basaltic columns.
Glacier Hiking and Ice Caving
Day 7: Jökulsárlón, beautiful iceberg beach
Höfn, fishing town with terrific lobster
Drive the scenic eastern fjords to Egilsstaðir
Day 8: Dettifoss, the most powerful waterfall in Europe, this was the waterfall in the opening sequence of the movie “Prometheus”
Husavík, whale watching opportunity depending on time of year
Day 9: Mývatn, natural spa area with much to see and do
Day 10: Akureyri, second largest city in Iceland, historic, numerous museum choices
Day 11: Hvítserkur, basalt stack on the northern shore that looks like a dragon drinking
Laugarbakki, village on a salmon river
Day 12: Eiriksstadir, Viking Longhouses
Grundarfjörður on the Snæfellsnes Peninsula
Kirkjufellsfoss, beautiful waterfall
Day 13: Djúpalónssandur Beach, Snæfellsnes Peninsula
Day 14: Camping in Reykjavík
Day 15: Blue Lagoon
Day 16: Depart Keflavík
**Suggestions: If you like colorful steaming earth and pools, check out the Krýsuvík and Seltún geothermal areas on the Reykjanes Peninsula in southwest Iceland.
If you would like to see puffins in South Iceland, visit Vík and Dyrhólæy May through August.
